Top 10 Dinners #2 & # 3 – Chicken!

We often cook a whole chicken on Sunday afternoon. It’s easy and makes delicious leftovers during the week. The basic prep is the same – Rob cuts the chicken into pieces and we bake it and have it with rice or potatoes and veggies of some kind. Where the variety comes in is with the seasonings. Everything from Cajun to Italian and  it’s all delicious. This week was a super spicy rub that included lots of  hot pepper.

It’s a pretty basic meal and can be dinner on Sunday, leftovers on Monday and some miraculous transformed meal another night.

One of our favorites is Dinner #3 – Chicken Fried Rice. We take the chicken off the bones and use it to make a totally different meal. Cook up onions, garlic, oil in pan. Add in veggies (frozen or canned), rice and chicken and cover to let the rice cook. If the rice is leftover, cook everything together to heat it all up and add seasonings if needed. We sometimes use a cast iron pan for this because the best part of fried rice is that crunchy part that sticks to the pan! =)

The best thing about chicken is that the flavor is up to you. Use whatever you like and it can be a different meal every time you make it.
