Almond Crackers (gluten-free)

Removing grains from my diet left me wondering what I could use to replace breads, crackers, chips, and other snacks. I found this simple cracker on snappygourmet.com that only uses 4 ingredients:

1 1/4 cups of finely ground almond flour
2 Tablespoons of melted butter (or other oil)
1/4 teaspoon of salt
1 large egg

Preheat the oven to 400 degrees (F)
Mix the flour and salt together, add the egg and melted butter.
Roll between two pieces of parchment paper until 1/8 inch thick.
Remove top parchment and transfer crackers to cookie sheet.
Bake for 7-10 Minutes until the edges are brown.

Roll between two pieces of parchment paper
Cut crackers with pizza cutter
Delicious!

The crackers are so simple to make and have a great flavor. I will probably add a bit more salt next time or maybe some parmesan cheese, it also would taste good with a bit of honey and cinnamon.

Really, the base recipe could be altered many different ways with a variety of herbs and spices. Sweet or savory, this recipe is one I will be reaching for again!
