Happy Liver Borscht

I have been studying the Liver in this current unit at The Herbal Academy of New England and decided to make this healthy and delicious soup for one of my projects. Simple ingredients and really easy to make, it’s perfect for such a cold winter day and it’s perfect to help support my liver health. I really appreciate this course because I am learning so much about healing foods and herbs and plan to transition to all home made bath, body and skin care products as I am able.

Something that I was surprised to learn in this unit is that the Liver is able to regenerate itself – as long as it is not diseased beyond regeneration. Our bodies are truly amazing!

Healthy, organic ingredients

Start with butter, onions and garlic, salt & pepper – cook for 10 mins.

Add broth, potatoes and beets – cook for 20 mins.

Add cabbage, mushrooms, kale and I cooked it for 20 mins.
You can also add tomato paste at this point
if you would like and serve with sour cream and fresh garnish of dill.
