Tortilla Crust Pizza

We generally make pizza every week. Rob makes his with a dough we get from the grocery store and I was buying a gluten-free frozen pizza and adding toppings to make it better. Last week I didn’t order the frozen pizza and was looking for a different way to do crust that would be a lower calorie – but still be like a pizza. I already had the tortillas in the freezer and found many, many different versions of tortilla pizza online.

I used two tortillas for each pizza, Monterey Jack shredded cheese, pizza sauce, onion, bacon and little mini pepperonis. Put it all together and baked for seven minutes at 400 degrees.

I am already thinking of different ways to make it. Maybe next week I will try goat cheese, arugula and tomato? Whatever it is, the tortillas are a great foundation. Setting this up as a pizza bar at a party would be fun – so easy and delicious and it cooks  in only a few minutes!
