Crockpot Chicken Soup

This is a simple and delicious recipe. I use drumsticks with the dark meat and bones to slow cook a more nutritious chicken broth.  You could also use a similar sized package of chicken thighs or legs.

Add the chicken to the crockpot:

Add one onion and garlic:

Add carrots and celery:

Add whatever seasonings you prefer
I used turmeric, salt, pepper, oregano.

Add frozen veggies – I added peas.
An hour before finishing, I added frozen green beans.

Cover with filtered water:

Cook on high for 4-6 hours – I usually do the 6 to make a rich broth:

The recipe makes  5 servings – I separated out the chicken from each drumstick into a serving and added veggies and broth. It also made a couple of extra pint size jars of broth and veggies.

This is one of my favorite recipes to use for the GAPS diet.  Rather than cooking a whole chicken, I am able to mange a few days of broth and soup and none is wasted.  A simple change of seasoning and veggies and you have a completely different soup. You can also leave out the extra veggies and make a chicken stock for other recipes.  A simple, nutritious meal.
