Butterflied Chicken & Dry Rub

Rob is cooking an organic chicken we bought from the grocery store and he’s trying a new technique. He butterflied the chicken by cutting out the backbone with kitchen shears and flattening the chicken in a baking pan. He rubbed the chicken with olive oil and a special mix of herbs he made into a dry rub (equal parts):

Smoked paprika, Dalmatian sage, Onion powder,  Garlic powder, Ginger powder, Kosher Salt

Bake at 350 degrees for 1.5-2 hours (5 lb. chicken) for  slow cooking
(Bake at 450 degrees for 50 minutes for fast cooking)

The flavor of the seasoning mix really make this amazing – in particular the Smoked Paprika and Dalmatian Sage.

SO delicious! And simple – so just combine some of your favorite flavors and try something new the next time you cook! We just fill empty spice jars with our mixes so we always have some ready to use.

Until next time,
Michele
